200g butter
100g soft brown sugar
100g black treacle
150g golden syrup
110g medium oatmeal
180g self raising flour
¾ tsp baking powder
2 tsp ground ginger
2 large eggs - beaten
2 tbsp milk
Preheat the oven 170c/gas mk4. Grease and line an 8” loose bottomed cake tin
Add butter, black treacle, golden syrup and brown sugar in a pan on a low heat. Simmer until all sugar and butter have melted.
Remove from heat and leave to cool slightly
Mix all dry ingredients together in a bowl, add cooled sugar mix and mix together.
Add milk and eggs slowly until combined.
Pour mix into the tin and bake for 35-45 mins
Leave to cool before removing from the tin.
